Simple. Some people, like me, only use the bridge pickup anyways. Using only one pickup also allows for less electronics, meaning less knobs and pickups to smash your hands on, and no selector switch to make noise and need replacing. Seing how it's a custom shop, it doesn't make much sense, since you'll be paying more for less...
But maybe the smaller amount of routing will influence the sound.
